Minestrone Soup, an Italian vegetable soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely hacked
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stems, diced
- 1 zucchini, diced
- 1 cup green beans, cut into scaled down pieces
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) cannellini beans, depleted and flushed
- 4 cups vegetable stock
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup little pasta, (for example, ditalini or little shells)
- 2 cups hacked spinach or kale
- Ground Parmesan cheddar for serving
Instructions;
1. In an enormous pot, heat olive oil over medium intensity. Add the slashed onion and garlic, and sauté until mellowed.
2. Add carrots, celery, zucchini, and green beans to the pot. Cook for around 5-7 minutes, or until the vegetables begin to relax.
3. Pour in the diced tomatoes with their juices and add the cannellini beans. Mix well.
4. Add vegetable stock, dried oregano, basil, thyme, salt, and pepper. Carry the soup to a stew and let it cook for around 15-20 minutes to permit the flavors to merge.
5. Meanwhile, cook the pasta independently as indicated by the bundle guidelines. Channel and put away.
6. Add the cooked pasta and slashed spinach or kale to the soup. Cook for 5 extra minutes, or until the greens are withered and the pasta is warmed through.
7. Taste and change preparing if fundamental. In the event that the soup is excessively thick, you can add more vegetable stock.
8. Serve the Minestrone Soup hot, finished off with ground Parmesan cheddar.
