Fluffy Yolk-Only Omelette with Optional Fillings


                 


Ingredients:

  • Eggs (2-3 per person)
  • Salt and pepper to taste
  • Cooking oil or butter for greasing the pan
  • Optional fillings: diced vegetables (bell peppers, onions, tomatoes), shredded cheese, herbs (chives, parsley), or cooked meat (ham, bacon)

Instructions:

  1. Separate and whisk the yolks: Crack the eggs and separate the yolks from the whites. In a bowl, whisk the egg yolks until well combined.

  2. Season: Add salt and pepper to taste to the whisked egg yolks. Whisk again to ensure even seasoning.


  3. Prepare fillings (if using): Chop vegetables, shred cheese, or prepare any other fillings you'd like to add to your omelette.


  4. Heat the pan: Place a non-stick skillet over medium heat and add a small amount of cooking oil or butter. Ensure the entire surface is coated.


  5. Pour yolks into the pan: Once the oil or butter is hot, pour the whisked egg yolks into the pan.


  6. Cook the omelette: Allow the egg yolks to set for a few seconds. Gently lift the edges with a spatula, tilting the pan to let the uncooked yolks flow to the edges.


  7. Add fillings (if using): Sprinkle your desired fillings evenly over one half of the omelette.


  8. Fold and finish cooking: Once the yolks are mostly set but still slightly runny on top, fold the omelette in half using the spatula. Continue cooking for another minute or until the yolks are fully cooked but still moist.


  9. Serve: Slide the omelette onto a plate and serve hot.
